Sherry, a self-confessed non-pastry-chef, drew on the sunker (a Brazilian cross between a cobbler and a fruit tart) and built her version around an almond pâte brisée filled with cherry, blueberry, and strawberry compote, finished with a passion fruit mousse and a wisp of cotton candy. Her grated-butter pastry technique creates pockets of air for flakiness. 


{Sherry}: "When you grate the butter, you have these perfect little nuggets that creates pockets of air on the dough. It’s gonna be super flaky and delicious." 


Oven traffic during the cook left the crust thicker than ideal, and judges noted the galette was undercooked at its base, though the rest landed. She finished in the top three.

{Judge}: "Sherry’s galette was undercooked. I think the rest of it actually was quite good." 


{Judge}: "The thing that I did appreciate about Sherry’s dish are the little pops of the passion fruit and then the curd and the berries. Everything had a little point of tartness to it." 


{Judge}: "The dish was flavorful." 


{Judge}: "Who doesn’t look at cotton candy and doesn’t smile?" 


{Judge}: "The passion fruit on the bottom, that’s the best."
