Black Candle: Dark Chocolate Sponge & Ganache with Sriracha Mango Ice Cream 'Flame'
Matt's 'evil' dessert built around his forbidden sriracha — a sculptural black candle.
Matt: "For my evil dessert, I'm going to mimic these black candles. It's a dark chocolate candlestick with mango ice cream flame. And I'm going to add the sriracha in with some of the mango."
On presentation: "My evil dessert is a dark chocolate sponge with mango ice cream. I was inspired by everything that was on the floor today. So immediately I saw the black candles, and I'm like, this is going to be a lot of fun with the dark chocolate and then the sriracha — and the spice was the secret ingredient here in the flame of the candle."
Padma Lakshmi: "I love the idea of the burning black candle, but I'm sorry — you didn't put sriracha in the chocolate."
Wylie Dufresne: "That being said, I loved the ice cream. I thought the texture of the ice cream was great."
Nina Métayer (guest): "The chocolate ganache and biscuits with cocoa — it's just a little bit too heavy. I would prefer, like, a ganache montée or something more light."
Padma Lakshmi: "Matt, I think both of your desserts are visually really stunning, and you're cooking at a very high level."
