Black Forest Eclairs with Kirsch
Matty created eclairs inspired by Black Forest gateau, topped with kirsch chantilly cream and featuring cherry elements.
The judges found these eclairs looked messy and felt Matty had attempted too much. They appeared very soggy, and Paul noted the wrong shape decoration that sat over the top, creating shadows. While the flavor was lovely and not too sweet, really capturing strawberries and cream, the texture was compromised by being too soggy.
