A seven-layer black forest tort including milk chocolate ganache, a set cherry jelly layer and a mirror glaze, baked as individual thin layers and left open-sided to show the layering. 


Stuart's previous baking triumph was his own wedding cake; he is prone to panicking under pressure. 


{Stuart}: "I'm just trying to relax as much as I can, because when I panic that's when it goes wrong for me." 


{Stuart}: "It's going to be open-sided so you can see all the layers straight away, and it lets the different flavours come through as you bite into it." 


{Stuart}: "I'm reducing cherries down with a bit of sugar, adding gelatin and setting it in a square - a cherry jelly layer. I did it for the first time this week, so I've got to make sure it's perfect." 


{Stuart}: "I'm using the scraps of the short sponge to make the final layer, because this is going to be the very bottom."

{Paul}: "You haven't got the finish. It looks messy, a mess. I think the flavours are good, the textures are good." 


{Mary}: "It just doesn't look quite professional, but the fruit, the cream and the sponge are absolutely fine. It's just not cutting right and looking a little bit untidy."
