Blackberry, Nectarine and Dragon Fruit Tart

Narrator: "Brendan's showstopper will see blackberries, nectarines and dragon fruit combined with vanilla creme patissiere, rosemary scented mascarpone cream and an elderflower glaze."
Brendan: "I particularly want to regain my ranking and my position, having had two poor quality bakes yesterday, which wasn't a pleasant experience. But I will today design a tart that will look stunning."
Brendan: "What I'm making is creme patissiere, which is French egg custard. And you must keep it moving because it will curdle otherwise."
Later: Brendan: "It's a cumulative thing, and I've been under pressure this weekend particularly. That's not very nice. I hadn't experienced that for the first few weekends. I was very much conscious of it this weekend, so I'm not going to let that happen to me again."
Mary: "What a picture."
Paul: "I think it looks great. I mean, it's a platter of fruit."
Mary: "It's something we've never seen before, with these very attractive Florentines around the outside."
Paul: "Got a nice bake underneath."
Mary: "The whole combination is nice. The creme pat could have been a little bit thicker. It tastes cooked through. It just needs to be a little bit more solid."
In deliberation, Paul: "Brendan had a bit of a disaster on his tarte Tatin, has picked it up. Does that qualify him to be in the bottom? Maybe, because all the others are very good as well."
