Blackberry and Lemon Bakewell Slice
Four-layer bakewell with sweet shortcrust pastry base, homemade blackberry jam, ginger and lemon-flavored frangipane, and almond topping. First-time traybake attempt while managing exam stress. Dialog: {Ruby}: "I'm making a BlackBerry Bakewell tart. Basically, when it's cut, you should be able to see four distinct layers of the base, the jam, the frangipane and the almond topping. So it's just got a sweet short crust pastry for the base and then I've made a BlackBerry jam. And the frangipane is flavored with ginger and lemon as well. I'm going to be pushed for time and this pastry needs to stay cool. I've never done tray bake."
{Ruby}: "I'd like to apologize for my BlackBerry bake. Well, it's messy and it's under baked." {Paul Hollywood}: "You have got a bit of a soggy bottom there. I think the flavor is excellent, but the textures are all wrong. The pastry is awful as well."
