A former dancer who now works in advertising and lives in London with her partner Tom and daughter, Nikki filled her stout cake with a tart seedless blackberry jam and malt buttercream, decorated with stout-themed tuiles. The blackberries recall her granddad's garden. {Nikki}: "Got to make the seedless blackberry jam with chocolate. I'd like to add fresh fruit to cut through the bitterness." {Nikki}: "This kind of takes it back, because when we were younger my granddad grew blackberries in his garden. My sister and I used to go out and pick them, stuff them all in our gob as well before bringing the rest in to him." {Nikki}: "These blackberries are good." {Nikki}: "Don't have too much jam. The whole cake itself is sweet enough." {Nikki}: "Cutting out the tuiles."
