Cal describes his canape as "very clean, it's elegant, and then there's a lot of big flavors in there," using ingredients local to him in Northumberland. The canape is a blackcurrant and shiso tartlet filled with venison tartare, dressed with a smoked egg yolk jam. Cal on the egg yolk element: "What I call egg yolk jam because it is, like, really jammy."
