Blackened Orata

Bailey: "My third course is blackened redfish. It is sort of a nod to Sarah Gruenberg. I will be making blackened orata because of her upbringing in Houston fishing with her grandfather."
Presenting to Judges
Bailey: "This is a blackened style Orata with a Calabrian chili crunch in a little whipped tahini. This dish is inspired by Chef Sarah at Monteverde. She grew up fishing redfish with her grandfather, so we always have some variation of redfish on the menu there."

"My fish was a little bit overcooked, but I did appreciate the creaminess of the tahini."
"It didn't have the brightness that I wanted it to. It just didn't feel like the sunny, happy food that I know Bailey's used to making."
