Blood Orange Sorbet with Whisky and Sparkling Wine Foam
Orry: "Just making this blood orange sorbet." Orry: "The pre-dessert is going to be basically a dessert cocktail. So whisky sour has usually got cherry and orange. So I'm going to do a blood orange sorbet in a martini glass. Then there's going to be a sparkling wine and whisky spoon over the top. A little bit of olive oil in there for a bit of creaminess, and then a little bit of long pepper over the top for a bit of warmth." Orry: "Feel like I'm having a breeze right now because I've only got two things to make. Everyone's like running around." Orry layers blood orange sorbet and a drizzle of olive oil into the glass.
VETERAN ROUND: Adam: "The foam on the top is so light." Adam: "I find this quite refreshing." Narrator: "Feels quite elegant." Jun: "I took the biggest bite. It was so good." Hannah: "Stunning." Adam ranked this pre-dessert 1st. Adam: "This one, without a shadow of a doubt, is my favourite." JUDGING ROUND CHANGES: Orry added marinated cherries to the dish. JUDGES FEEDBACK: Tom: "This one I find more classic. Interesting, but feels very safe." Phil: "I couldn't really taste much flavour in the espuma." Lorna: "Not my favourite pre-dessert, but the olive oil I really liked in there." The judges preferred Jun's pre-dessert in the ranking. Tom: the panel unanimously chose Jun's dish as their favourite.
