Blueberry & Maple Bacon Soda Bread
Lottie's sweet soda bread inspired by her favorite blueberry pancakes, featuring whole blueberries and maple bacon. The bread had uneven distribution of blueberries and issues with bacon placement.
Paul: 'Well, the blueberries are not exactly evenly spread, are they? But when I do get a blueberry, it's delicious and the texture is really good. It's just I'm missing the bacon. It's wasted on the outside. A lot of it's just going to end up on the plate as we see there. You're not going to taste it.' The texture was praised but ingredient distribution was problematic.
