Sherry: "I'm doing the south of the border bossam. Homage to Momofuku in New York City, where I grew up, with a little rice that is seasoned with the pig's head and chimichurri. It's honoring everything and everywhere that I have ever been." 


Presenting to the judges: Sherry: "I made the south of the border bossam, eastern style vinegar dressing, a cabbage chow, my version of rice and hash, pickled cucumbers, a little fresh herb salad." When a pitmaster asked about the green-coloured rice: Sherry: "I made a classic chimichurri. It's a Brazilian sauce that we always eat with barbecue." 


RESULT: Sherry wins Round 1, taking the pitmaster collective vote and the judges vote. Red team leads 1-0 and Sherry earns $5,000.

{Tom}: "Both really good dishes, but I just prefer Sherry's. It was beautifully cooked. It had beautifully crisp skin on it, tons of fat, lots of flavor." 


{Gail}: "My favorite was definitely Sherry's. Just the crispness of everything was a light smoke, but delicious."
