Braised Pork Belly with Braised Okra and Seeded Tempura
Sieger: "Choosing fried okra was a little bit of a gamble. Super tender. Tom doesn't like it. Tristan also doesn't enjoy it. But if I can manipulate the taste and texture, maybe I can fool Tom into thinking he likes okra." Sieger: "I'm actually gonna braise the okra to get as much flavor into it. Then I'm gonna take tempura and cover it in fried crispy bits. I'm not actually frying the okra. The most important part of my dish is getting this pork belly cooked. 90 minutes. To braise pork belly, you gotta use a pressure cooker. Now we dance." Sieger (presentation): "You've got braised pork belly, braised okra, and then on top, seeded tempura, wanted to change it up and not just put fried okra on a plate." Sieger (judges table): "That was the choice, and I wanted to keep the skin on too, to have all of that meltiness to kind of offset the seeded tempura that's on top." Sieger (winning): "Feels great to win. Obviously, it was a gamble, but I'm headed in a direction of who I am and how I like to cook."
Winner. Immunity awarded. {Tom}: "I liked it, and I'm a hater of okra, but crunchy bits, I think help. I like the gelatinous skin." {Tristan}: "It's melting." {Greg}: "I cut right through it. He cooked it right." {Sabrina}: "It made it a main dish when he added that pork belly." {Greg}: "Okra gets a bad rap, but they cooked it right." {Tristan}: "That thought process was really smart. It was a really successful plate." {Tom}: "You did a really great job of saying, here's a simple okra dish. I'm making some crispy bits. I'm going to braise some pork. That's it. I'm standing by it, and it works." {Greg} and {Tristan}: "The winning chef today created the spirit of a Southern side, turned it into an entree, showed themselves on a plate, and really made delicious food." {Padma}: "Chef Sieger, congratulations. You just won yourself immunity in the next elimination challenge."
