Chef Adam (during prep): "I've got some buckwheat flour, some dried apple, some ricotta and some eggs."
Andi Oliver: "Adam pan fries the mixture and will top this with cod roe emulsion and apple."
Chef Adam, presenting to judge: "This is an apple blini. It's with a smoked cods roe emulsion, a little bit of apple on top, and then some smoked pike roe."
Aktar Islam (judge): "In second place would be Adam and his blini. Different textures. I thought the radish at the end had a nice little crisp to it."
"Rich but light at the same time. I really like that."
