Amber describes: 'Here we've got a buckwheat and black pepper tartlet with a Cornish camembert and toasted walnut.' During preparation, she whips Cornish camembert for her tart. When asked about her pastry by Nicholas, she explains: 'Buckwheat and black pepper pastry. Very similar [to shortcrust].' The pastry has a distinctive aroma, with Nicholas noting 'Smells cheesy.' Amber is 'returning to compete for a second time' after growing up in Bristol. She works in private dining and as a food educator in a school, saying: 'I think being in the environment I work in nowadays, a lot of people might have some questions about whether I've still got what it takes. I've still got my knowledge and I've still got the drive to do really well in this competition.' She acknowledges being 'Second time for me, but still equally as nervous as the first time.' Amber anticipates Michael Caines will be 'quite a harsh critic' with 'a lot of experience' and notes he is 'very meticulous.'
Michael Caines ranked Amber third: 'I thought that tartlet was delicious, but I just felt that there was a little bit more from the other two.' Nicholas: 'I love the crunch of the tartare, the savory flavor.' Ashleigh: 'Pickled walnut works very well.'
