Massimo: "I want to highlight all the beauty and richness of Alberta. I'm going to make a smoked bacon jam to highlight cowperson culture. And I'm going to make a handheld flapjack."

Massimo: "So I made buttermilk pancakes. The red sauce is grilled plums, smoked bacon marmalade as well. And peach purée."

" Massimo. Yeah, I just wish it was bigger. And I didn't think that you needed two sauces. They were both very acidic."
