Caldereta: Braised Short Rib with Liver and Vegetables
A toast to Rhoda's father.
While prepping: "Fourth course for my dad. It's a dish called caldereta, one of my favorite dishes that he makes, usually around Christmas or New Year. My dad's a merchant marine. He wasn't around a lot when we were growing up because of work. He's the best dad. I can't think of a better dish to honor him with."
At service: "This is a toast to my dad, caldereta, braised in liver and vegetables." On choosing no dessert: "After we talked about all the courses being a toast to something, it was important for me to honor my parents."
Final table: "It's a dish we usually cook during a big celebration," normally served "just in a bowl, and you eat it with rice, with all of that stuff mixed in together."
{Judge}: "It's delicious."
{Guest}: "The meat is perfect. The sauce is delicious."
{Guest}: "Very well executed on the short rib, it's very tender, very well seasoned. It was everything else on the plate that kind of felt like it didn't get enough love."
{Judge}: "If she'd glazed the vegetables in the braising liquid it would have been better."
{Guest}: "The little things we're finding on each dish are so small. You really have to nitpick at this point."
Final table: {Guest}: "Everything was cooked really well, but it kind of felt like you got lost in the story of trying to present a dish you grew up with."
{Judge}: "There's a term for that. Chefed it up."
{Judge}: "You can't end on eggplant, so you had to go to a heavier course. I thought it was a good move not doing dessert."
