Gail Simmons: "So before turning the olives into each component, did you do anything to tame the salt?"
Chef Kevin: "No, that's why we wanted to use the olive first. And after this course, we will continue with layering."
Judges: "Did anyone feel like Kevin's dish is just too salty?"
Judges: "Yes."
Judges: "There's so many different textures, but all I taste was olive."
Judges: "This wasn't a composed dish. It was, you know, three snacks on a plate."
