Caramel and Apple Trifle
Caramel and Apple Trifle

Howard spent weeks perfecting his caramel and apple trifle topped with macadamia nuts. As a keen jogger when not baking, he faced multiple challenges during the bake including struggling to fit square elements into round bowls and having his custard accidentally used by Deborah. He made true creme anglaise with just egg yolks, taking the bravest approach by avoiding cornflour. Despite the custard mix-up, he managed to complete his trifle featuring caramel sauce, stewed apples, and macadamia nut topping.

Mary Berry noted that Howard's custard (which Deborah used) was better than Deborah's version, praising it as a great custard made without cornflour. However, when judging Howard's own portion, the judges found his custard needed more cooking but acknowledged it was still superior to Deborah's technique. The layers lacked proper definition and the custard was too liquid, though the flavors worked well together.
