Vicar's wife Sarah-Jane bakes from hundreds of recipes handed down by her grandmother; her family favourite features only caramel and fresh banana. Sarah-Jane: "I bought my own knife from home because it's got a perfect rounded end for going around the bowl and cutting through the butter. I can't make pastry without this knife." Sarah-Jane: "You put some lemon juice in with the water. Don't quote me, but I think it helps break down the gluten in the flour so the layers can really puff up." Sarah-Jane: "I've done this one three or four times because it's everybody's favourite. It's very simple compared to everybody else today." Sarah-Jane: "I'm going to slice them into discs."
Paul: "I think it looks great. You've got a fantastic colour. I love what's happened to the bananas. It's lovely and flaky underneath." Mary: "No soggy bottom. That tastes absolutely delicious. I was very impressed the way you chose something simple and carried it out perfectly." Paul: "It's delicious. It's toffee, it's banana, it's crispy, it's layered, it's buttery." (Sarah-Jane: "For Mary Berry, a legend, to say my tarte tatin was perfectly baked is up there with one of my best life experiences ever.")
