Caramelised Onion, Gruyere and Thyme Quiche

Joanne, who bakes up to ten times a week for friends and family in Essex, makes a caramelised onion, Gruyere and thyme quiche.
{Jo}: "I've made a caramelised onion with Gruyere cheese and thyme quiche." Mary watches her fill the case and cautions about the pale pastry.
{Mary Berry}: "Have you baked that blind? It is a little bit pale. When you're baking blind, the whole idea is to cook and lightly brown the pastry."
Mary also warns her to keep the filling from spilling over the edges, where it would stick.
{Paul Hollywood}: "It looks unappetising. The pastry is okay, but it needs more colour. It's very dry."
{Mary Berry}: "It tastes really lovely, but it just doesn't look good." A pale, under-coloured pastry let the bake down, though the flavour was praised.
Jo was criticised again in the technical, finishing 10th - Paul called it "a bit of a disaster."
