Cardamom Sandwich Cake with Rhubarb

Lucy's cardamom-spiced sponge inspired by her trip to India, filled with rhubarb from her own backyard. She's a former primary school teacher turned gardener who oven-cooks her rhubarb to maintain its shape and beautiful pink color.
Paul: 'The sponge tastes good. And the rhubarb has that tang at the end. The cardamom's nice. It's not overwhelming. It can be a killer. But I think overall it's a nice cake.' Mary: 'It does look a little bit untidy on the top, but you've got a very good sponge.'
