Carolina Ruby Sweet Potato Tostada

Which Show?
Who made this dish?
Sieger's first-course option for Tierra Reina anchors the team's Latin-with-Carolinas concept in a Carolina Ruby sweet potato (an heirloom variety prized for its deep orange flesh and sweetness). Sieger: "These are sweet potatoes for the tostada... I hit the sweet potatoes with the miso, roasted them off." The roasted sweet potato is piled onto a crisp tostada shell and finished with a drizzle of crema and a salsa negra (a dark, smoky Mexican chile sauce). Oscar plates it tableside: "He really wanted to represent Carolina Ruby sweet potato. Then he did a little crema and salsa negra." Positioned as the meal's tone-setting vegetable bite.
{Michael}: "I actually really enjoyed Seeger's dish. I love the sweet potato and the chili crunch." {Kristen}: "I personally want just a little bit more of, like, a sauce or something to bring it all together." {Gail}: "I don't like the presentation. It just felt really messy." {Claire}: "I feel like I need one more ingredient, like, a smear, maybe a bean or something." Judges' table - {Kristen}: "Seeger, the tostada. It was a tasty bite, but I wish it had more sauce or something to, like, really tie it together." {Michael}: "I would agree that was a little dry, but concept wise, I thought it set a great tone for the meal."
