Bailey: "I'm just thinking it's the land of the rising sun in the north. What if I juice carrots and make this bright risotto? So I'm laying down some risotto on the first challenge of Top Chef!"

"I did a carrot risotto, some pickled beets on top, and then I wanted to do a preservation technique on the fish, so I decided to cure it."





Judges: "Gail, on the scale of good risotto to bad risotto on Top Chef, where does this sit?" 


"It's not the worst risotto we've had on Top Chef, but it is not a good risotto. The carrot risotto and the char, to me, it didn't go together. Risotto is about the rice, and yet you make a dish that's about char and beets and carrots and everything, but rice. That was a rough one for me."
