Anna (during cook): "Preserved lemon in this soup can be very overpowering, so he needs a light touch when it comes to that."
Grace (during cook): "It doesn't want to be too sharp. It needs a tiny bit of sugar just to make it sing."
Natalie Coleman: "Gareth's doing roasted cauliflower and preserved lemon soup. I'm a bit worried about preserved lemon because it's quite a dominant flavor."
Dhruv Baker: "There's sweetness, there's acidity, plus the za'atar. So how does he choose to do that with that flavor of that roasted cauliflower coming through as a soup?"
Pookie Treadle (tasting): "I think this dish is beautiful. Just the taste, unfortunately, doesn't match the look. The preserved lemon is just too strong in this."
Natalie Coleman (tasting): "The pickled cauliflower is all right, but it's still mixed in with the soup. It's overpowered by the lemon flavor."
Dhruv Baker (tasting): "It's a well made soup. There's no lumps. I just think dialling down that preserved lemon element would let those other flavours come through."
Anna (tasting): "The preserved lemon, it is far, far too strong."
Grace (tasting): "I can't taste the za'atar oil or hibiscus, which are two big flavours."
Grace (summary): "Gareth's soup fell down in the tasting by putting too much preserved lemon. It dominated."
