Satya's signature Indian feast: paneer and cauliflower marinated in yogurt, cumin, turmeric and garam masala then char-grilled, with creamy dal makhani, cumin rice, pineapple chutney and a tomato-cucumber salad. A dish that would usually take a whole day, attempted in 90 minutes. Some of the cauliflower and paneer caught and burned.
Judge: "My favorite part beyond doubt is your pineapple chutney - I like the black stickiness, it's really dramatic. But with the cauliflower and the paneer, a lot of it is burned."
Judge: "Your dal has got great complexity and the curry leaves are such a beautiful flavor. But if you took a few elements off there, you'd have represented your cooking better."
