Gordon Ramsay: "Julio and Rachel, tell me about the dish. What are you doing?"
Julio: "Chef, we're doing pan seared octopus. Then we're going to do patatas bravas with a bell pepper salsa and some pickled apples."

"Cooking octopus is difficult. Cooking octopus in 60 minutes is 10 times harder. But it looks so inviting."
Gordon Ramsay: "How long do you cook the octopus for?"
Julio: "It was in the pressure cooker for about 15 minutes, and then we did a hard sear in the cast iron pan."
