Carl made a Snowdonia cheddar gougere filled with an old Winchester custard and finished with a Worcester sauce gel. He described it as his take on a Welsh rarebit. A mustard cracker was added to the top of the choux pastry shell. Carl: 'We have got a Snowdonia cheddar gougere with the old Winchester custard and a Worcester gel. It is kind of my take on a Welsh rarebit.' The portion was notably generous. Tommy said it was executed perfectly with great flavours and ranked it first. Andy noted the portion was so large that Carl had only eaten half of it.
VETERAN ROUND: Tommy Banks ranked Carl first of the four canapes. Tommy said: 'Carl will steal it. Welsh rarebit, but it was executed perfectly, and the flavours were great.' Andy Oliver noted: 'You did only half of it.' Tommy confirmed: 'It was massive.' JUDGING ROUND: Pending transcript.
