Cheese Rice Cakes with Bechamel

Shuai: "I'm working with mac and cheese. I'm making rice cakes. Instead of Mac and cheese, this will be rice cakes and cheese. I decided to make rice cakes instead of just using dry pasta because I love the texture of a rice cake. It's, like, chewy. I've made it plenty of times. It's almost like making gnocchi."
