Which Show?
Who made this dish?
A cheese and onion donut stuffed with an acidic gel, served on top of a cheese and onion Catalan cream topped with crispy potato skins. The dough is made by cooking down milk and adding a bag of crisps to create a potato flavoured dough, a family recipe from Kristen's mother. The Catalan cream split during preparation and was rescued with double cream.
Kristen: "I've cooked down milk, and I've added in a bag of crisps so that it's like a potato dough. It's something that my mom has made since I was a kid."
Kristen: "Smells like a bag of crisps. And that's the point."
Kristen: "A cheese and onion donut stuffed with an acidic gel. On top, you have a cheese and onion Catalan with some crispy potato skins."
Kristen (on the split): "I just got some double cream to just emulsify it back again and again. Just breathe, stay calm."
VETERAN ROUND: Ranked 2nd of 4 by Sally Abbe and Jean Del Port (joint judging of the canape round).
Sally Abbe: "The cheese and onion was a great flavour combination."
Jean Del Port: "Really just sung in your mouth. I think it was really good." Marion (peer): "Your acidity is lovely in here."
