Cheese canelé with Chives

Andi Oliver (during prep): "Cal is preparing a cheddar and chive canelé, ordinarily a sweet French pastry. Cal's canelé will be topped with a pickled shallot gel."
Chef Cal: "I made a Doddington cheese cannelé with chive and nasturtium baked in smoked pork fat and beeswax, and then some pickled shallot as well."
Aktar Islam (judge): "My least favorite was Cals. Definitely had the crust, but the inside was quite dry. All of that crispy surface, and then it's lovely and chewy inside. Definitely need that touch of acidity."
