[Signature challenge: baked cheesecake inspired by a family favorite, baked with a relative] 

Nikki and her cousin Jen made a Bakewell-inspired Basque cheesecake with an almond shortbread biscuit base, cherry filling and a sour cherry gel disc on top, inspired by the Bakewell slices they shared at their grandparents' house. 

Nikki: "My Jen. Jen, I call her. When we were younger, we were at my grandparents' house, and he had lots of little cakes and you would buy Bakewell slices. And we love cherries. Cherries are both our favorite fruits. See, look, we finish each other's sentences." 

Nikki: "So like a shortbread almond biscuit base. This almond extract is from the West Indies, where our parents are from." 

Nikki: "I think we've nailed the cherry Bakewell flavor." 

Nikki: "This is the cherry disc. It's going to go on top of the cheesecake. It's going to set, so it's a bit like a gel." 

Nikki: "It needs that 10 minutes. Well, it's slightly brown on top." 

Nikki: "I'm using the ice just to really shock the heat in the tin, 'cause the time is ticking away." 

Nikki: "I have a feeling it's not going to set." 

Nikki: "The moment of truth. Could you pull the paper? Slowly, slowly." 

Nikki: "I have made a cherry [Bakewell cheesecake]. It didn't bake very well." 

Nikki: "It was four teaspoons." (almond extract) 

Nikki: "Next up, I'm going to put 1 teaspoon instead of 4 teaspoons of almond extract. It was just those flavors, just a little bit too much."
