Who made this dish?
Signature challenge: 30 identical American-style cookies in two hours, any flavor, with an appropriate decorative finish, crisp to the bite with a chewy center. Inspired by the cherry Bakewell, Gabe's almond cookies are packed with sour cherries and decorated with dark chocolate and freeze-dried cherries. He baked them on pizza stones for a crisp base. {Gabe}: "So I'm making some sort of cherry Bakewell cookies." Paul said it is one of his favorites. {Gabe}: "I know last week you said about personality in my bakes, and this is nutty and fruity, so it's me all over." {Gabe}: "I'm also cooking them on pizza stones because I want the bottom to really crisp up. I just want to hit all the brief. You know what I mean?" {Paul Hollywood}: "Like stone baked cookies." {Gabe}: "Yeah, stone baked cookies." {Gabe}: "So you've got an almond cookie and inside are some sour cherries and they're topped with a dark chocolate and some freeze-dried cherry."
{Nigella Lawson}: "I like the chew and the crisp edge. Beautiful." {Paul Hollywood}: "I think you've done a decent job with the flavor. For me, I think you've just gone slightly over with that. That's my only criticism. Otherwise, great cookie." [The transcript does not make clear what Paul thought had been overdone.]
