Who made this dish?
A hairdresser from West Yorkshire who learned to bake with his two grandmothers, Nanny June and Nanny Lynn, Tom went for Black Forest flavors: chocolate stout sponge, a cherry compote spiked with cherry brandy, piped cream cheese icing and chocolate curls. He baked in two tins to speed up baking and cooling. {Tom}: "We're making a chocolate stout cake and cherry compote, which is going to have a bit of cherry brandy in there as well. It's going to be a bit boozy." {Tom}: "If you do it in one big cake, it takes a lot longer to bake and cool. Doing it in the two tins will cook a bit quicker, cool a bit faster." {Tom}: "Got a little lemon, cherry brandy liqueur, just to add a bit of an extra kick to my compote." {Tom}: "They're cooling, but they're not cool enough quite yet." {Tom}: "The buttercream's nice and stiff."
{Paul Hollywood}: "Very neat, very professional actually. I love the cream cheese. I love the cherries as well." {Nigella Lawson}: "The flavors are giving me a lot of pleasure. But I think you've gone a bit too heavy handed on the bicarb."
