Signature challenge: 30 identical American-style cookies in two hours, any flavor, with an appropriate decorative finish, crisp to the bite with a chewy center. Inspired by a popular Australian chocolate bar, Nikki made chocolate cookies packed with cherries, coconut and hazelnut. Nikki first met her partner Tom when they locked eyes on the stairwell of the building they both worked in, and 23 years later they still make each other laugh every day. {Nikki}: "So I'm making a cherry chocolate cookie inspired by a quite popular chocolate bar in Australia. That's the kind of go-to chocolate bar." {Nikki}: "There's not enough cherries. I've only got one in here." {Nikki}: "I put a little bit of extra in here. So, cherry galore." {Nikki}: "So my cookies are chocolate, cherry and desiccated coconut." [Nikki's lines are merged with the narrator's in the transcript and are separated here by sense.]
{Paul Hollywood}: "They look like rocky roads." {Nigella Lawson}: "The sugar looks like the marshmallows here." {Paul Hollywood}: "The flavor is stunning. However, they needed longer in the oven." {Nigella Lawson}: "Because you've got the whole fruit, the liquid content has been a bit too high and that stopped them having that cookie texture. They look rather pretty. I think they're a bit flatter than you might have wanted because you had jam. You know, moisture is the sort of enemy of a cookie." {Paul Hollywood}: "I agree with you." [Nikki is not described as using jam. Nigella may mean the cherries, or this remark may belong to Shannon, whose judging follows.]
