Chef Dale: " I never really knew much about Mexican food. And then when I tasted my first mole, I felt so ignorant. So my message is, don't be ignorant. It's a one biter. If you swipe all the way through, then you get corn custard, the mole, pineapple on top of the chicken, pickled jalapeno, and some nuts right at the end there."

Padma Lakshi: "Dale's chicken had a weird, slabby like, floppy texture. It needed some salt as well."


Tom Colicchio: "What I find interesting about the dish, I think the mole was the best part of the dish."


Gail Simmons: "Pineapple, jalapeno, and then the mole. Those flavors, I thought were really beautiful. Just the chicken as the vehicle fell short."
