Chicken Liver Parfait Tart

Episode 1 version built on an almond nougatine tuile.
Josh: 'Just starting on almond [nougatine] with glucose sugar water put over the toasted almonds.'
Josh: 'Just me not behaving itself a disaster. My [nougatine tuile] is just very brittle, so it's breaking as I'm trying to shape it.'
Josh: 'It's a chicken liver parfait, licorice puree, slightly pickled candied grapefruit zest on an almond [nougatine] tuile.'
For finals day Josh changed the base entirely. Josh: 'I'm just going to brush foie de brick pastry with some butter, cut them out and bake them as little tarts.'
The finals version is a buttered feuille de brick tart case filled with silky chicken liver parfait, topped with licorice puree, candied grapefruit zest, shards of almond nougatine and a marigold petal.
Episode tasting (Aktar Islam, veteran): ranked the nougatine version last of the four canapes, saying he did not think it was balanced.
Abbie noted she really liked the licorice.
Finals judging (Tom Kerridge, Lorna McNee, Phil Wang, guest Simon Callow): the judges preferred this canape over Abbie's. Tom liked the way the licorice and the candied grapefruit worked together and called it a new flavour for him. Simon found the licorice interesting. Lorna said the grapefruit came through with real zinginess. Phil said it was light and fresh, and it was his preferred of the two canapes. The judges held up Josh's canape as their overall favourite at the finals pass.
