Chicken Liver Parfait Tartlet with Chaat Masala, Green Apple and Crispy Chicken Skin 


Nikita prepares a smooth chicken liver parfait set in a delicate pastry tartlet, topped with crispy chicken skin, chaat masala and green apple. She removes excess fat from the chicken skin before crisping it: 'This is chicken skin, so I'm just taking the fat off so that I can get it nice and crispy in the oven.' At the pass she presents: 'This is a chicken liver parfait tartlet with chaat masala, green apple, and chicken skin.' Spencer places this first out of four canapes: 'There was a lovely little bit of spice to it. Really great texture. I'm looking forward to seeing what she cooks.' {Louisa}: 'I like the touch of the apple on it.' {James}: 'Banging.'
