Andy's quarter-final dessert: a light and airy chocolate mousse with orange chantilly cream, a segmented orange and a little flaky salt on top. Andy and his fiancee make this chocolate mousse to celebrate milestones, including their engagement last year. The judges expected a surprise because the dish reads very simply, and Anna wanted the orange chantilly cream to be a flag in the sand of citrus cutting through.

Tony Rodd: the mousse itself is light, airy and tastes really good, but the flavour is just chocolate - the orange is so minimal in the cream. 


Simon Wood (paraphrased): would have liked more orange; misses a crumb or biscuit or some texture; if you like chocolate, it's okay, but it's a very basic dessert. 


John: a really light, fluffy chocolate mousse. 


Anna: the orange chantilly cream is really subtle. Andy goes through to the quarter-final.
