Chocolate Mousse Cake with Whisky Caramel

Chocolate Mousse and Blackcurrant Cake with Vanilla Ice Cream and Whisky Caramel.
Orry: "That's the shortbread for the ice cream." Orry: "The dish is a chocolate mousse with a blackcurrant insert. Then there's going to be a feuilletine base. Then under that, there's going to be a heather honey and brown butter sponge. On the side, we're going to do shortbread ice cream and peat smoked whisky caramel sauce." Orry: "This is chocolate and cocoa butter for the feuilletine base. Chocolate popping candy, sriracha, praline, hazelnut praline feuilletine and some cocoa Rice Krispies." Orry: "I burnt my shortbread." Orry: "This is the white chocolate cocoa spray to go on the outside of the cake." Orry: "So I'm just making the brown butter, heather honey sponge. And then in here is fresh eggs, tourmaline icing sugar, salt, baking powder, and plain flour." Orry: "That's popping candy and sriracha." Orry: "Shortbread on the bottom because it's shortbread ice cream." The cake is a round pink-iced cake with green piped writing. Orry wanted to let the fully assembled mousse and sponge cake reach room temperature before serving. Orry: "It's turned out exactly the way I want it, so I'm gonna say nine or a ten." (self-score)
VETERAN ROUND: Adam: "There's a lot going on, and he wants to make this sponge right at the last minute. I don't know how you're going to cool it down and form a whole cake that you can carve in the middle." Narrator: "Oh. Oh, yummy." Jun: "The ice cream is... do you think it should have done with a little bit more shortbread?" Narrator: "I think it's a bit eggy." Adam: "The chocolate flavour in the mousse. Do you think the chocolate needs a little bit of salt?" Orry: "It has got a little pinch of salt in there, but I think with the salted caramel as well, I think it's nice." Hannah: "I love the mousse. It's a really nice texture. I think the layers and the quantity, like, the balance of it is all off." Narrator: "It feels like a sponge on top of a cake as opposed to one whole thing." Jun: "I think, like, if it was all together, it would be nice." Narrator: "This feels very dry." Adam: "The heather honey coming through there." Orry: "It's just a background note, really." Peer scores: Jun suggested 7-8. Adam final feedback: "Orry, for your dish. It looked exactly like the cake. The dark chocolate mousse was faultless. However, the sponge was a little dry, and the heather honey didn't really come through. I would suggest you brush that sponge with a little bit more honey. The ice cream was a little on the dull side. I suggest either lose the ice cream altogether or try the shortbread in a different component, perhaps in a baked custard insert to give another layer to that cake." Adam's score: 8. JUDGING ROUND CHANGES: Orry replaced shortbread ice cream with vanilla ice cream. Brushed sponge with heather honey. Cooked sponge for less time to avoid dryness. Personalized cakes with judges' names. Orry: "He didn't really like the shortbread ice cream. Said it didn't really have much of a taste to it. So I've scrapped that, and I'm doing just a really nice vanilla ice cream." Orry: "Just brushing the sponge with a little bit of heather honey. It was one of Adam's comments about just trying to heighten the honey flavour in the sponge. I think the sponges are a lot better this time." Orry: "New ice cream. It's like Mr. Whippy. It's delicious and hopefully that makes a difference." JUDGES FEEDBACK: Lorna: "Everything's really well made. The mousse is really well made, great texture. The sponge is good. The blackcurrant inside, that nice acidity it brings. The vanilla ice cream is probably my favourite part. Very good vanilla ice cream. I just don't know how I feel about it as a dessert. I feel like it's cake." Phil: "Rich and delicious, but also light enough. You keep coming back for more." Tom: "Chocolate mousse was amazing. Technically I thought it was delicious. My issue with it is actually the blackcurrant. When you have a big mouthful of it, particularly if you hit right in the middle, it really does overpower the chocolate mousse." Catherine: "I just loved that blackcurrant, and I quite liked it overwhelming everything else. It was so sharp and lovely." Tom: "It's good fun. It makes you smile. This would be great at the end of a banquet." Lorna: "It's happy." Catherine: "I really loved it and thought it was an amazing recreation."
