Keith had pivoted to this dish after his caramel caviar spherification attempt failed in the final 15 minutes: I was at the top of the leaderboard, and now I'm, like, fighting for my life.
Padma Lakshmi: It's rich, but it's good. I love this dish. I do think there's a little bit of bitterness in the smoked nut. Wiley Dufresne: It is. It's decadent. You got the salt this time. Next time, a little bit more acid.
