Who made this dish?
Full name: Chocolate Orange, Espresso and Irish Cream Self-Saucing Puddings
First to start in the staggered signature. A light chocolate orange sponge over a rich cocoa sauce, doubled up with a ganache center for a molten middle.
Gary: "It made no difference really to me. I suppose really I'd rather get on with it."
Gary: "Chocolate orange, espresso and the Irish cream whiskey."
Gary: "You need that sauce to be nice and gooey. So what I don't want to do is finish it too early, because it'll cool and thicken."
Gary: "I'm going to do some ganache which I put in the middle of the pudding. Hopefully there's enough sauce."
Gary: "It's not like a Victoria sponge cake. It's more airy."
Gary: "In the sponge you'll taste the Irish cream liqueur, the orange and the espresso."
Gary: "What I'm going to do is fill these halfway up and then put a ganache in the middle. It should give it a gooey center."
Gary: "You don't know, do you really, till they dig into it."
Gary: "That really went well for me, that one."
Nigella (at the bench): "You've got quite a lot going on. The important thing really is to get the elements that work." / "Got to have a bit of goo. That's the point of it."
Paul: "They do look nice and they look uniform."
Paul: "You've got some sauce there. I'm getting all those elements and a nice balance."
Nigella: "The ganache in the middle works well because it's giving a slightly different texture than the self-saucing sauce."
Paul: "Well done, Gary."
