Toby: "So these are my orange chocolate mousse cups. They have a white chocolate orange shell, an orange chocolate Anglaise mousse, an Earl Grey sponge soaked in orange liqueur, and then an orange gel on top." The inspiration came from his tourette. Toby: "I like to have fruit in a lot of my bakes because I think it lightens it a little bit. And orange and chocolate are such a classic." During preparation Toby was dipping the Earl Grey sponge and squeezing out the excess and pushing it through his biscuit crumb compote. Toby: "This is the orange gel which I've not managed to get to set in practice." At the end Toby reflected: "Oh I can't believe that. I thought that was going to be absolutely horrendous. Yeah it was great. What a ride."
