Chocolate Orange Za'atar Tart

Chocolate orange tart with za'atar and pomegranate, served with chocolate soil, mascarpone cream with pomegranate molasses, pomegranate gel and an orange caramel sauce.
Finn: "I always make sure to have time to cook for the kids, but they're still stuck in chicken nuggets and chips phase, which breaks my heart."
Finn: "A chocolate orange tart with za'atar pomegranate, some orange caramel mascarpone, whipped cream, pomegranate gel and chocolate soil."
Finn: "These quite classically Middle Eastern flavours - they've all come from my fiancée's pantry. She brought them all back with her from work. Every time she goes away, she brings back, like, a trove of fun stuff to play with."
Finn: "This one's got a split down there, but I can cover it up." Finn: "It's not a total disaster. I think all of the elements on there, on the right day, find some harmony, but today wasn't the right day for that."
Anna (during cook): "Za'atar is cheating. Traditionally used in savoury dishes, it's a mixture of dried herbs like thyme, oregano, marjoram."
Grace (during cook): "That pastry is where the magic is. It needs to be thin and crisp. The chocolate ganache needs depth. It has to have set."
Grace (tasting): "I do like the chocolate tart. There is a real thwack of orange when you go to eat it. I think there's maybe a bit too much za'atar, which is kind of overpowering the other elements there."
Anna (tasting): "Your orange sauce is too tart, but your soil is beautiful and crunchy. You've made a wonderful pastry, some really good stuff there."
