[Technical challenge: mystery box, no recipe, two hours, judged blind. Finished 2nd]
Mo made a choux pastry Paris-Brest filled with a chocolate mousse-style cream, with raspberries, working entirely from memory.
Mo: "I'm going to try and record all my recipes that I know I can do."
Mo: "I'm going to attempt a choux pastry Paris-Brest."
Mo: "I think it's perfect."
Mo: "I'm gonna probably fold in some whipped cream, some chocolate. So it's like a chocolate moussey kind of vibe."
Mo: "I kind of guessed the measurements. That's just who I am as a person."
{Noel}: "Look at you. That's been no recipe."
Mo: "This [is] memory."
Mo: "I might just try and conceal the holes."
[Blind judging]
Nigella: "Paris-Brest. One of my absolute favorites."
Paul: "I do like Paris-Brest. Great flavor of the chocolate. The choux's actually not badly baked."
Nigella: "[The fillings] are lovely. But the raspberries made everything a bit wetter, and you don't need that flavor there."
Paul: "But overall, I think it's pretty decent."
Nigella: "I do applaud the ambition."
Paul (announcing 2nd place): "Nice choux. Great taste of chocolate as well. Well done."
Judges' ranking: 2nd.
