Chocolate Puff Puff with Plantain Pastry Cream, Spicy Peanut Crumble, Raspberry and Chocolate Ganache
{Rita}: "I'm making chocolate puff, basically puff puff. I'm putting chocolate in the dough, then a plantain pastry cream filling, a spicy peanut crumble, raspberry, and chocolate ganache."
{Rita}: "Joe targeted Africa, so I'm going to show her that we are a threat."

{Judge}: "This doesn't look like any street food puff we've seen, this is definitely elevated. I like seeing different layers of chocolate used in different ways."
{Judge}: "They're delicious. The chocolate inclusion is wonderful, but the actual plantain is delicious. I thought it would be too starchy, that's the bit that lifts it. They taste like one of the most glamorous donuts I've ever had."
{Judge}: "The texture is nice on the outside, and it absolutely needed the raspberry coulis because there are such dark chocolate notes. I've never had anything quite like it."
