Cider and Walnut Crusty Rolls

Nancy incorporated pears into her rolls and topping, combining pear cider, walnut oil and rye flour to form a yeasted crust. Nancy said: "I'm going to do pear cider and walnut and I'm putting a few dried pears in that have been soaked in some cider, but you don't actually see them, they just give you a sweetness."
Paul Hollywood commented: "The pear that you've grown there with the cider, it tastes beautiful. It's slightly underbaked. Needed about another five, possibly 10 minutes. Wouldn't have done it any harm, and they would have been almost perfection." Nancy said: "They look stunning. Thank you."
