Nursery teacher Manisha looks after her dad and brothers and spends what time she can with friends, who have all tried her classic apple and pear tatin. Her caramel gave her trouble on the day. Manisha: "So this is going to go in the bin." Manisha: "I think the sugar crystallized. That's never ever happened before. We are going to start again." Manisha: "This is the fifth one and this is the sixth. I've not touched number four and three."
Before baking: Mary: "I saw you having a little trouble with that caramel. In a non-stick pan it will often crystallize, and it's very important not to stir; you dissolve the sugar stirring, then leave it alone and let it boil till it's a caramel. And you got there in the end." After tasting: Mary: "You had a tricky time to start with that caramel, but you got there in the end." Paul: "My only thing is I like a dark colour; I like to see a caramel." Mary: "Pastry could do with a bit more cooking." Paul: "The flavours are good, but it's under baked."
