Coconut, Mango and Passion Fruit Frangipane Tarts

Illyin is adding a tropical twist to her frangipane.
Illyin: "I am making a toasted coconut frangipane. I want it to taste like sunshine and to hopefully look like sunshine as well."
Voice-over "Illyin's ambitious coconut frangipan tarts will be topped with a passion fruit mousse dome, mango jelly and decorated with chantilly cream."
Prue Leith: "Sounds absolutely wonderful."
"I do quite like the decoration. It's quite cute, but the pastry shells look terrible."
Illyin: "I needed to make the pastry again. They all started to collapse. All right, so it's a shortcrust pastry with a coconut frangipane, a mango and lime gel topped with a passionfruit mousse dome."
(Judges taste): "I would have concentrated on one - either mango or passionfruit, because that would have come out stronger.
"Pastry is a little underbaked, I think."
"Yes, pastry is underbaked. Quite soggy, actually."
