{Toby}: Reveals he used Gordon Ramsay's rough puff recipe after Paul criticized his previous attempt: "After I did proper puff last time, Paul absolutely slated me for it. Told me it's not possible. Stupid idea. So rough puff this time this week." He admits: "I'd never made rough puff. First time I tried, it didn't go that well. Don't tell Paul. Used his rough puff recipe. Didn't work very well, so I had to switch to Gordon Ramsay." During prep notes the heat challenge: "It's annoyingly warm in here." Takes precautions: "Butter is not meant to leak out. I've done everything that I can to make it not leak. It was literally frozen going in." After baking observes: "I've got the puff. There's lamination coming out the oven." Working on assembly: "Once I've dipped these, then I'll fill them. I just love these colors." Time pressure evident: "That was such a rapid end."  


His chocolate coffee ganache and coffee liqueur cream filling shows good flavor but pastry had issues with butter loss.

Paul: "I quite like the flavor of these. So quite like the blend of the colors. I'm just wondering whether your horns needed longer in the oven." After tasting: "The flavor of the coffee is delicious. It's nice and punchy."
